Subject: The Change in Consumers' Tastes as a result of Novel Information Regarding Food Safety
Abstract: We estimate a structural demand model for meat in Israel. We exploit a unique shock in the safety perception of processed meats, caused by the World Health Organization announcement of processed meat as carcinogenic to humans, to uncover changes in consumers' unobserved tastes towards processed meats. We find that the shock in the perception of safety caused a decrease in consumers' utility from processed meats relative to other meats and hence affected the quantities purchased. Moreover, we find that the intensity of households' response to the safety shock is affected by their ex-ante attachment to the processed meat category. The stronger the attachment the lower the intensity of the response.
